TORTELLINI MODENESI! The smallest that you can see…and eat
Last year, on my blog in English I added a post about the tortellini with Adriana, with the recipe and even a few pictures, but I was really disappointed not to have a video. Or better, I thought I had it, but when I came home, on my computer, I connected thecable and I saw that there was nothing. There have been terrible.
Adriana is a lady who lives in the Modenese Apennines. She lives in a stone house in the mountains, with her husband Callisto and their dog “Lupo” (Wolf).
Up there the mountains, where in winter snows almost every day, Tortellini Emiliani are a “must”; there is no woman of a certain age who does not knows how to make them and the skill is passed down from mother to daughter. These Tortellini are the most difficult ones, just because very small (you start with a square of 2 cm max!); and it is very rare learning how to make them, unless in fact you know some woman from Emilia, with a desire to teach.
When I found out that Adriana wanted to move on to someone this “art” … I immediately proposed myself for a private cooking class and I also involved Ginny of course, who woke up early in the morning and had not breakfast, to learn how to give shape to this type of pasta so unusual for her.

… Don’t worry, anyway Ginny did not remain on empty stomach, it took 3 or 4 “pandistelle” cookies by granny Adriana’s pantry and more, every 3 tortellini realized she ate one of them … so.
During our cooking classes in Tuscany with Cuocheinvacanza, Tortellini are highly sought after and loved, so this post wants to be a little thought for all of our customers (and others) very interested in the topic.
