<h3 style="text-align: justify;"><strong><span style="font-family: Georgia,'Times New Roman',serif;">Simple, Fast, and delicious</span></strong></h3>
<p style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;">I am preparing the menu for an exam about the chef world, ideas, ideas, and even a little &#8216;fear. The days go by fast and the tests and experiments on what to bring on that fateful table &#8230; well, just do not seem to end.<br />
Anyway, I&#8217;m not sure I get anxious, cooking is my passion, it&#8217;s what makes me feel good, and I keep this in mind, from when I wake up in the morning when I close my eyes and fantasize about what to prepare the next day.<br />
</span></p>
<p style="text-align: justify;"><span style="font-family: Georgia, 'Times New Roman', serif; text-align: justify;">Well, today I&#8217;m going to prepare a dish belonging to cucina povera Toscana: a simple one, and maybe not just so beautiful to look at, but for flavor and aroma, it has nothing to envy a first-course gourmet.</span></p>
<p style="text-align: justify;"><img data-recalc-dims="1" loading="lazy" decoding="async" class="aligncenter size-large wp-image-7949" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min.jpg?resize=917%2C1024&#038;ssl=1" alt="gnocchi gnudi from tuscany" width="917" height="1024" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=917%2C1024&amp;ssl=1 917w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=269%2C300&amp;ssl=1 269w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=768%2C857&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=1376%2C1536&amp;ssl=1 1376w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=1834%2C2048&amp;ssl=1 1834w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?resize=640%2C714&amp;ssl=1 640w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2022/02/IMG_8376-min-scaled.jpg?w=2000&amp;ssl=1 2000w" sizes="(max-width: 917px) 100vw, 917px" /></p>
<div style="text-align: justify;">
<div style="text-align: justify;">
<h3><strong><span style="font-family: Georgia,'Times New Roman',serif;">Cucina Povera meaning</span></strong></h3>
<div><span style="font-family: Georgia,'Times New Roman',serif;">It happened to me a few days ago, having lunch with a friend at a famous restaurant in Pisa; I tasted the dumplings, certainly very good, but when I saw the price&#8230; €24 the portion&#8230; I immediately thought about &#8220;gnudi&#8221;, this </span><span style="font-family: Georgia,'Times New Roman',serif;">&#8220;Cucina Povera&#8221; </span><span style="font-family: Georgia,'Times New Roman',serif;">dish. Poor cuisine yes, but just in cost, because the flavor and ingredients that come straight from nature, are what most rich in flavor exist in the world. </span></div>
<div><span style="font-family: Georgia,'Times New Roman',serif;">Cucina Povera (Poor Cuisine) is the richest thing for health that can exist. All fresh, seasonal, directly from the farmer. These &#8220;Gnocchi&#8221;, mentioned already <a href="https://en.wikipedia.org/wiki/Pellegrino_Artusi" target="_blank" rel="noopener">by Artusi</a> in his famous book (Recipe No. 97 Ravioli), were made a long time ago with chard but then tastes change and times the same and therefore now they are made more with spinach. They are called <b>&#8220;</b><b>Gnudi</b><b>&#8220;</b> because they do not have the coating of pasta such as classic ravioli and here in Tuscany the word &#8220;Gnudi&#8221; just means naked, without clothes. </span><br />
<span style="font-family: Georgia,'Times New Roman',serif;">So guys let&#8217;s enjoy this easy cooking dish, fast, tasty and delicate at the same time. Let&#8217;s enjoy this dish that requires a very limited budget, but that fills your mouth with the sweetness of the ricotta and melts slow and soft with the taste of the parmesan cheese and the smell of sage.<br />
It&#8217;s prepared in record time&#8230; the same as it takes to &#8220;clean up&#8221; the pot.</span></div>

<p style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;">Prep time: 30 minutes</span><br />
<span style="font-family: Georgia,'Times New Roman',serif;">Cook time: 3 minutes</span><br />
<span style="font-family: Georgia,'Times New Roman',serif;">Total time: 33 minutes</span><br />
<b><span style="font-family: Georgia,'Times New Roman',serif;"></span></b></p>
<h3 style="text-align: justify;"><b><span style="font-family: Georgia,'Times New Roman',serif;">Ingredients</span></b></h3>
<ul style="text-align: justify;">
<li><span>300 gr (10 oz; 1 1/4 US cup) spinach</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;"><span>210 gr (1 US cup)</span> fresh ricotta cheese</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">60 gr (3 tbsp all-purpose flour + 2 tbsp to sprinkle over the &#8220;gnudi&#8221;)</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">1 egg</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">60g (3 tbsp) parmigiano reggiano cheese grated</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">60 gr (2,12 oz) melted butter</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">1 pinch nutmeg</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">8 leaves sage</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">1 pinch salt</span></li>
<li><span style="font-family: Georgia,'Times New Roman',serif;">1 pinch pepper</span></li>
</ul>
<h3 style="text-align: justify;"><b><span style="font-family: Georgia,'Times New Roman',serif;">Cooking Directions</span></b></h3>
<ol>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Put the ricotta in a colander to drain for a few hours (or overnight) in the refrigerator. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Boil the spinach in salted water. Drain, squeeze and chop them. Instead of boiling, you can cook them directly in a pan, to avoid the water excess.</span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Let them cool. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Mix the ricotta cheese with flour, parmesan cheese, and nutmeg. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;">Pour in the egg and mix well</span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;">Add the spinach and mix together. Add salt and taste. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Boil salted water in a pot. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Form with your hands </span><span style="font-family: Georgia,'Times New Roman',serif;">some small balls or some quenelles using 2 tablespoons. These ones are the most difficult.</span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Melt the butter in a pan with the sage leaves. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;">Put some parchment paper over a tray and sprinkle some flour over the paper. </span></li>
<li style="text-align: justify;">Gently set the Gnocchi Gnudi over the paper and sprinkle again with some flour.</li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Boil the Gnocchi Gnudi in boiling water for about 2 minutes. Just come to the surface they are ready. </span></li>
<li style="text-align: justify;"><span style="font-family: Georgia,'Times New Roman',serif;"> Drizzle with melted butter and sage and sprinkle generously with Parmesan cheese. </span></li>
</ol>

<p class="p1" style="text-align: justify;"><span class="s1">Actually here in Tuscany at this moment it is not really a good season: it is windy and it rains almost every day.</span></p>
<p class="p1" style="text-align: justify;"><span class="s1">Yet a couple of days ago the sun was still shining like in Summer. This is why I went to make blackberries and strawberry grapes around the fields with my husband.</span></p>
<p class="p1" style="text-align: justify;"><span class="s1">Well, we love going for walks in the countryside, in late Summer. To pick the fruits that the earth offers us before autumn comes. Many families especially in Tuscany take delight in making blackberry jam. In fact, in Tuscany, there are many varieties of plants of the Mediterranean scrub; well, the blackberry is one of these and you can make exquisite jams but also liqueurs.</span></p>

<h3 style="text-align: justify;">TIPS AND TRICKS</h3>
<p class="p1" style="text-align: justify;"><span class="s1">First of all, never add pectin or substances chemicals to your homemade jam. It is natural and it must remain natural. Otherwise, you might as well buy it at the supermarket. So even when you make strawberry jam do not use pectin or chemicals, <em><strong>just add small pieces of apple to make any jam soft and creamy.</strong></em></span></p>
<p class="p1" style="text-align: justify;"><span class="s1">The second tip to give you is that in general, it is always better to add sugar to the fruit in a bowl, cover it with a film and let it macerate for about half an hour. In fact, this allows the sugar to enter the fruit but also allows to release fruit juices itself so that your work is already halfway through.</span></p>
<p class="p1" style="text-align: justify;"><span class="s1">Another trick advice that you must absolutely follow is <em><strong>to cook the fruit as little as possible.</strong> T</em>his not only preserves the aromas, the perfumes the vitamins, and minerals but obviously makes it aesthetically much more beautiful. </span><span class="s1">The colors in fact remain almost intact.</span></p>
<p style="text-align: justify;"><img data-recalc-dims="1" loading="lazy" decoding="async" class="aligncenter size-large wp-image-6879" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO.jpg?resize=768%2C1024&#038;ssl=1" alt="BLACKBERRIES JAM TUSCANY" width="768" height="1024" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?resize=768%2C1024&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?resize=225%2C300&amp;ssl=1 225w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?resize=1152%2C1536&amp;ssl=1 1152w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?resize=1536%2C2048&amp;ssl=1 1536w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?resize=640%2C853&amp;ssl=1 640w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2020/10/BIGTOO-scaled.jpg?w=1920&amp;ssl=1 1920w" sizes="(max-width: 768px) 100vw, 768px" /></p>
<p class="p1" style="text-align: justify;"><span class="s1">But how to preserve the colors of the fruit and above all to obtain a jam even with little cooking time?</span></p>
<p class="p1" style="text-align: justify;"><span class="s1">Well, we find the answer in the type of container, in the type of pot you have to use while cooking. So here&#8217;s the trick: do not use tall and long high pots and narrow but prefer wide non-stick pans where all the fruit can be safe without being superimposed too much. In this way, the juices will evaporate very easily and quickly. So with about 20-25 minutes, you will have obtained a perfect excellent delicious jam!</span></p>
<p style="text-align: justify;">Just a note: I do not pass the blackberries in a vegetable mill. Actually, I prefer to preserve the seeds which are very useful for our health and clean the intestines. Anyway, you can use the mill after the first 15 minutes of cooking, or as the blackberries appear softer.</p>

<p class="p1" style="text-align: justify;">Among the things that I am delighting to do and cook during this COVID quarantine could not miss the strawberry jam. Right now in Tuscany strawberries are sweet, red, and juicy and I am using them to prepare the most disparate things from salads to cupcakes to stuffed cakes.</p>
<h3 class="p1" style="text-align: justify;">This Tuscan strawberry jam lends itself to multiple uses:</h3>
<p class="p1" style="text-align: justify;">you can also use it to make the delicious <a href="https://www.cookingclassesintuscany.net/camaiore-cooking-class-for-a-bachelorette-party-a-magnificent-villa-on-the-top-of-a-wild-hill-and-our-gorgeous-italian-crostata-with-apricot-jam/" target="_blank" rel="noopener noreferrer">Italian Crostata (tart);</a>  to decorate your dishes, as a sauce for <a href="https://www.cookingclassesintuscany.net/cooking-school-chef-tuscany-panna-cotta/" target="_blank" rel="noopener noreferrer">Panna cotta</a> and a very interesting aspect of strawberry jam is to accompany cheeses deliciously, at the end of the meal.</p>
<p style="text-align: justify;">You can spread it on a slice of bread and be directly in paradise maybe adding a little bit of butter. Well, this is what you can find here in Tuscany at my b&amp;b near Lucca:  <a href="https://www.dolcevitaintuscany.com/" target="_blank" rel="noopener noreferrer">dolce vita in Tuscany</a>.</p>

<p class="p1" style="text-align: justify;">Anyway, I am not the only one to say that this is the best strawberry jam you can eat. In fact, many chefs and restaurateurs have asked me for the recipe and obviously, I did not hesitate to pass it on because <span style="color: #0000ff;"><strong>good things must be handed down, </strong></span>as my granny often said.</p>
<h3 style="text-align: justify;">This jam brings to my memory the stories of my grandmother.</h3>
<p style="text-align: justify;">Traditions of walks in the fields to pick the strawberries of the Maremma land. From Spring to late Summer the women who lived in the countryside gathered in the farmyard and prepared the most varied jams. They had at their disposal ripe fruit directly from the trees. At that time, preparing a jam, was an opportunity to meet and laugh together. Large pots steaming with ripe and sugary fruit were in the center of the farmyard;  the perfume (told me my grandmother) spread throughout the surrounding area.</p>

<p style="text-align: justify;">However, although this was already the best strawberry jam, I wanted to add my touch to the recipe. My variant for this jam is the use of <em><strong>vanilla bean</strong></em> which in my opinion gives a unique and enhancing flavor and aroma.</p>
<h3 style="text-align: justify;">The secret of the goodness of this recipe:</h3>
<p style="text-align: justify;">is to use a fairly large pot (I use a large pan) because in this way cooking will be fast and not only the flavor but also the color of the jam will be exceptional.</p>

<h3 style="text-align: justify;">Super easy cake <em>Story: </em></h3>
<p style="text-align: justify;">This cake was born after the Second World War here in Tuscany.</p>
<p style="text-align: justify;">When American soldiers came in the Tuscan countryside, they met the Tuscan housewives which often prepared meals with poor and few ingredients from the country. The American soldiers had some military biscuits and cocoa and the Italian housewives had the butter (from their cows), the sugar and the egg&#8230; From this meeting was born the super easy cake Chocolate Salami!</p>

<div>
<div>Recipe by <b>Erika Elia (CuocheinVacanza.com)</b></div>
<p>Prep time: 10 minutes<br />
Cook time: 15 minutes<br />
Total time: 25 minutes<br />
Serves:</p>
<p><b>Ingredients</b></p>
<ul>
<li style="text-align: justify;">2,82 oz (80gr) dry biscuits (Petite or Saiwa)</li>
<li>7 tbsp (100gr)  of butter</li>
<li>3 oz (80gr) sugar</li>
<li>4 tbsp (30gr) bitter cocoa</li>
</ul>
<p><b>Instructions</b></p>
<p>Melt the butter<br />
Put the cookies inside a paper bag and break up the biscuits with the punch (or a rolling pin) until reaching the size of about 1 cm2.<br />
In a bowl, with the help of a whip, cream the butter with the sugar. Then add the cocoa, which must be poured gradually from top to bottom.<br />
Obtained a dark brown cream, we can add, if we like, 1 tablespoon of rum or milk, stirring constantly.<br />
Now, you can pour the crushed biscuits into the bowl with this mixture. Not all in one time, but in 3 times, incorporating each time the cookies it into the mixture. With the help of a wooden tablespoon, it will be easy to mix everything.<br />
Pour this mixture on a baking sheet and close it by giving the shape of a roll (salami).</p>
<p>Put this package inside another sheet of foil and roll up all the pressing and stretching the sausage until the end of the foil.<br />
Put this delicious “Salami” in the fridge for at least 2 hours; then cut it into slices (an inch thick) with a long knife.</p>
</div>
</fieldset>
<h4>Gluttons pour whipped cream over the slices, someone prefers to accompany it with vanilla ice cream and I like it very much with fresh strawberries.</h4>

<h3 style="text-align: justify;">The first time&#8230;</h3>
<p style="text-align: justify;">Can&#8217;t forget the first time that I fell in love with venus rice. My friend Simona introduced me to this fascinating and flavored ingredient. I&#8217;m writing here a very fast recipe full of Italian fresh veggies flavors!</p>
<h3 style="text-align: justify;">Sciué Sciué</h3>
<p style="text-align: justify;">It&#8217;s one of those recipes that here in Italy we call &#8220;sciuè sciuè&#8221;, Italian for &#8220;very quick&#8221;. Once arrived at home after my beloved job throughout Tuscany, I watched my kitchen and my fridge (like the Donald Duck one!) and I realized I had just fresh and seasonal veggies and some venus rice.</p>
<p><img data-recalc-dims="1" loading="lazy" decoding="async" class="alignnone size-full wp-image-5878" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?resize=2448%2C3264&#038;ssl=1" alt="cooking venus rice italian version" width="2448" height="3264" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?w=2448&amp;ssl=1 2448w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?resize=225%2C300&amp;ssl=1 225w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?resize=768%2C1024&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?resize=300%2C400&amp;ssl=1 300w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2018/04/IMG_4942.jpeg?w=2000&amp;ssl=1 2000w" sizes="(max-width: 1000px) 100vw, 1000px" />I like to experiment with new dishes and make fusion cuisine.</p>
<p>Well, what&#8217;s better than sundried tomatoes from <a href="https://en.wikipedia.org/wiki/Apulia" target="_blank" rel="noopener noreferrer">Puglia</a>  to give the real Italian taste of Summer to a far East dish?</p>
<p>So guys here&#8217;s the recipe, success is guaranteed and flavor as well.</p>
<p>Taste it and you&#8217;ll understand why I fell in love with venus rice!</p>

<p><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;">In addiction to this, my mum made me a beautiful gift; an italian book with all the important tips we must know when cooking.</span></p>
<p><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;">I know we live in a fast world and traditions and customs are disappearing, but I always meet people (in <b>cooking classes and in <a href="https://www.cookingclassesintuscany.net/private-dinners-in-tuscany/" target="_blank" rel="noopener">private dinners</a></b> as well) who want to know more about italian food and the way to prepare it and they&#8217;re always interested in authentic experiences. </span></p>

</div>
<div style="text-align: justify;" data-blogger-escaped-style="text-align: justify;">
<p><strong><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;"><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;">TIPS</span> for PIZZA, BREAD, FOCACCIA </span></strong></p>
</div>
<ol style="text-align: justify;">
<li data-blogger-escaped-style="text-align: justify;"><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;">More time you let that Pizza dough rises, better is. Anyway, to check if it&#8217;s at the right point: </span><span style="font-family: georgia, 'times new roman', serif;" data-blogger-escaped-style="font-family: &quot;georgia&quot; , &quot;times new roman&quot; , serif;">put a small ball of dough in a glass with cold water, if it resurfaces, the dough is ready to be stretched, stuffed and baked.</span></li>

<p class="p1" style="text-align: justify;">Some years ago I came to live here in the Lucca countryside, to manage my <a href="https://www.dolcevitaintuscany.com/" target="_blank" rel="noopener noreferrer"><strong>&#8220;Dolce Vita&#8221; Cooking School and Vacation Home&#8221;.</strong></a></p>
<p class="p1" style="text-align: justify;">I immediately thought of the indispensable plants for me.</p>
<p>First of all the aromatic herbs, necessary for a chef, cooking classes Instructor as for anyone working with food.</p>
<p>In this period, during my <a href="https://www.cookingclassesintuscany.net/store/" target="_blank" rel="noopener noreferrer"><strong>online interactive cooking classes</strong></a>, I always show wild Tuscan herbs. So, live, it is much easier to understand what it is. Especially if my students live in a country far from mine.</p>
<p align="center"><iframe src="https://www.youtube.com/embed/azrQxaJ2G68" width="560" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p>
<p class="p1" style="text-align: justify;">So I immediately sowed</p>
<ul style="text-align: justify;">
<li>thyme (here in Tuscany we call it &#8220;pepolino&#8221; and it&#8217;s fantastic with any kind of Mediterranean sauce)</li>
<li>basil</li>
<li>mint</li>
<li>origan (for pizza but for &#8220;pizzaiola meat&#8221; as well)</li>
<li>catmint (amazing with mushrooms)</li>
<li>sage</li>
<li>rosemary</li>
</ul>
<p style="text-align: justify;">These plants under the Tuscan sunshine definitely grew very well and they are still alive in my garden even after many years.</p>
<p class="p1" style="text-align: justify;">Then I tried to grow 4 0 5 types of hot pepper that I love using for many dishes, both in our <strong><a href="https://www.cookingclassesintuscany.net/cooking-classes-tuscany/" target="_blank" rel="noopener noreferrer"><span style="color: #800000;">cooking classes</span></a></strong> and <strong><a href="https://www.cookingclassesintuscany.net/private-dinners-in-tuscany/" target="_blank" rel="noopener noreferrer"><span style="color: #800000;">private dinners</span></a></strong>.</p>
<p class="p1" style="text-align: justify;">And then one day I saw in a greenhouse near my home a beautiful lemon plant and I quickly brought it home.</p>
<p class="p1" style="text-align: justify;">Well, the lemon under the Tuscan sun, rather than that of Campania, has grown steadily and for 15 years my plant gives me beautiful and juicy lemons like the one from Sorrento.</p>
<p style="text-align: justify;"><img data-recalc-dims="1" loading="lazy" decoding="async" class="wp-image-5522" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/lemon-1117562__340.jpg?resize=453%2C340&#038;ssl=1" alt="lemons" width="453" height="340" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/lemon-1117562__340.jpg?w=453&amp;ssl=1 453w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/lemon-1117562__340.jpg?resize=300%2C225&amp;ssl=1 300w" sizes="(max-width: 453px) 100vw, 453px" /></p>
<p class="p1" style="text-align: justify;">How I usually use these fantastic lemons:</p>
<ul style="text-align: justify;">
<li><strong><a style="color: #800000;" href="https://www.cookingclassesintuscany.net/tuscany-vacations-arancello-customers-holiday/" target="_blank" rel="noopener noreferrer"><span style="color: #800000;">Limoncello </span></a></strong></li>
<li>Lemon jam</li>
<li>Lemon jelly</li>
</ul>
<p class="p1" style="text-align: justify;">Anyway, first of all, I love preparing the &#8220;exceptional&#8221; lemon curd (I&#8217;m writing the recipe down to this post).</p>
<p class="p1" style="text-align: justify;">This custard is an excellent filling for pies and tartlets.</p>
<p class="p1" style="text-align: justify;">Its &#8220;degreasing and refreshing&#8221; power makes it the most delicious way to end each meal.</p>
<p class="p1" style="text-align: justify;">It&#8217;s gorgeous even if you simply spread it on toasted bread, that is exactly what I made yesterday.</p>
<p class="p1" style="text-align: justify;">I enjoyed it while sipping a hot cup of tea in the garden under the Tuscan sun. Bello!</p>
<p class="p1" style="text-align: justify;">This cream has the strong flavor of Sorrento lemons, and should not be confused with the lemon pastry cream because it is much more &#8220;lemony&#8221;.</p>
<div id="attachment_5529" style="width: 5856px" class="wp-caption aligncenter"><img data-recalc-dims="1" loading="lazy" decoding="async" aria-describedby="caption-attachment-5529" class="wp-image-5529" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/gala-rodriguez-86599.jpg?resize=5846%2C3901&#038;ssl=1" alt="lemons" width="5846" height="3901" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/gala-rodriguez-86599.jpg?w=2560&amp;ssl=1 2560w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/gala-rodriguez-86599.jpg?resize=300%2C200&amp;ssl=1 300w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/gala-rodriguez-86599.jpg?resize=768%2C512&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2017/11/gala-rodriguez-86599.jpg?resize=1024%2C683&amp;ssl=1 1024w" sizes="(max-width: 1000px) 100vw, 1000px" /><p id="caption-attachment-5529" class="wp-caption-text">Photo by Gala Rodriguez on Unsplash</p></div>
<p class="p1" style="text-align: justify;">Anyway, after several attempts, I managed to get a balanced recipe, where lemon makes the lion&#8217;s part, but without being too aggressive.</p>
<p class="p1" style="text-align: justify;">I like to prepare this cream and put it in glass jars.</p>
<p class="p1" style="text-align: justify;">The fact that it can be done in full Winter consoles me a lot because even without being under the Tuscan sun, is like producing jars of sun.</p>
<p style="text-align: justify;">Well, do not hesitate to prepare this curd from Tuscany.</p>
<p style="text-align: justify;">Be sure to buy (or to pick up <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> ) organic lemons; they can&#8217;t be treated with chemical compounds.</p>

If there&#8217;s something we don&#8217;t like,  we&#8217;ll probably like it if fried.</p>
<p>Probably that&#8217;s why <span style="color: #800000;"><strong>Frati Toscani (Tuscan Doughnuts)</strong></span> are one of the most requested desserts in our <a href="https://www.cookingclassesintuscany.net/cooking-classes-in-tuscany/" target="_blank" rel="noopener noreferrer"><strong>Cooking Classes in Tuscany</strong></a>, mostly in our <strong>kids&#8217; cookery classes, </strong>when there&#8217;s someone who like kneading and working by hands. Anyway ours are definitely all <strong>hands-on</strong> <strong>cookery courses on vacation</strong> and we often prepare Tuscan Doughnuts in our <a href="https://www.cookingclassesintuscany.net/camaiore-cooking-class-a-fairy-tale-cottage-in-the-wood-and-cappellacci-stuffed-with-amaretti-cookies-with-gorgonzola-cream-sauce/" target="_blank" rel="noopener noreferrer"><strong>couple cookery courses</strong></a> with and for adults as well.</p>
<p>In Spring or Summer, when sun is high and a swimming pool is waiting for you, you can mostly enjoy your holiday learning to make a typical <strong>Tuscan Menu</strong> <strong>at your holiday home; </strong>there&#8217;s no bigger gift to me than see the smiles and happiness of our cooks-students together with their family and friends.</p>
<p><img data-recalc-dims="1" loading="lazy" decoding="async" class="aligncenter wp-image-3982 size-large" title="frati-donuts-tuscany-cookery-courses-cuocheinvacanza" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_6358.jpeg?resize=1024%2C768&#038;ssl=1" width="1024" height="768" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_6358.jpeg?resize=1024%2C768&amp;ssl=1 1024w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_6358.jpeg?resize=300%2C225&amp;ssl=1 300w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_6358.jpeg?resize=768%2C576&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_6358.jpeg?w=2000&amp;ssl=1 2000w" sizes="(max-width: 1000px) 100vw, 1000px" /></p>
<p>Last Summer we run a <strong>Private Cooking Class for a family </strong>of 4 that came from U.K.; they were here in Tuscany on vacation in a <a href="https://www.cookingclassesintuscany.net/san-giuliano-terme-an-english-bb-in-the-tuscan-nature/" target="_blank" rel="noopener noreferrer">beautiful B&amp;B among olives trees,</a> between Pisa and Lucca: <a href="http://www.lucertola.info/" target="_blank" rel="noopener noreferrer"><strong>La Lucertola</strong></a>. The parents like cooking and kids are used to read culinary books and try recipes, anyway they were curious how to prepare Tuscan Donuts and <a href="https://www.cookingclassesintuscany.net/tuscany-tortelli-maremmani-huge-ravioli-and-homemade-egg-pasta-by-popular-demand-my-grandma-recipe/" target="_blank" rel="noopener noreferrer"><strong>Tortelli Maremmani</strong></a> and their <strong>cooking class</strong> was focused on these.</p>
<p><img data-recalc-dims="1" loading="lazy" decoding="async" class="aligncenter wp-image-3986 size-full" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_7613.jpeg?resize=2448%2C3264&#038;ssl=1" width="2448" height="3264" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_7613.jpeg?w=2448&amp;ssl=1 2448w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_7613.jpeg?resize=225%2C300&amp;ssl=1 225w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_7613.jpeg?resize=768%2C1024&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_7613.jpeg?w=2000&amp;ssl=1 2000w" sizes="(max-width: 1000px) 100vw, 1000px" /></p>
<p><strong>Tuscan Doughnuts</strong> are very simple to make, but (as everything simple) it needs to be respected each step; in addiction to this, I&#8217;m passing you a small trick from my granny: using fresh heavy cream in the dough, to give an amazing soft and light texture.</p>
<p>The name is <strong>&#8220;<em>Frati&#8221; (italian for monk</em>)</strong> because of the &#8220;ring&#8221; of hair that monks have on their head.</p>
<p>If you prepare them without the &#8220;hole&#8221; in the center, here in Tuscany they are named <strong>Bomboloni (Italian for Krapfen)</strong> and you can fill them with a <a href="https://www.cookingclassesintuscany.net/lucca-and-pisa-tuscan-zuccotto-with-coffee-and-chocolate-cream-culinary-arts-cooking-classes-and-tuscany-cooking-and-a-visit-to-modigliani-exhibition-to-start-the-new-year/" target="_blank" rel="noopener noreferrer"><strong>Chocolate Cream</strong></a> or <a href="https://www.cookingclassesintuscany.net/private-dinners-and-cooking-classes-zuppa-inglese-trifle-a-new-dessert-directly-to-your-holiday-home-in-tuscany/" target="_blank" rel="noopener noreferrer"><strong>Custard</strong></a>&#8230;I leave you to imagine how they&#8217;re amazing.</p>
<p>Here in Tuscany we used to prepare Frati Doughnuts during Carnival festivity, together with other fried delicacies sold <em>&#8220;on the road&#8221;</em> during country fairs. In fact nowadays you can find these doughnuts in every season of the year, but they&#8217;re still sold as a street food, or prepared at home from mothers and grannies.</p>
<p>Like everything &#8220;easy to taste&#8221;, <strong>Tuscan Doughnuts</strong> are perfect at any time of the day: snack, lunch or dinner time; the left doughnuts from our <a href="https://www.cookingclassesintuscany.net/cooking-classes-in-tuscany/" target="_blank" rel="noopener noreferrer"><strong>cookery lessons in Tuscany</strong></a> (we often prepare a lots) are perfect as breakfast for the day after.</p>
<p><img data-recalc-dims="1" loading="lazy" decoding="async" class="aligncenter wp-image-3983" src="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_0419.jpeg?resize=646%2C862&#038;ssl=1" alt="" width="646" height="862" srcset="https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_0419.jpeg?resize=768%2C1024&amp;ssl=1 768w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_0419.jpeg?resize=225%2C300&amp;ssl=1 225w, https://i0.wp.com/www.cookingclassesintuscany.net/wp-content/uploads/2016/12/IMG_0419.jpeg?w=2000&amp;ssl=1 2000w" sizes="(max-width: 646px) 100vw, 646px" /></p>
<p>My granny&#8217;s tips:</p>
<ol>
<li>Use heavy fresh cream</li>
<li>Be sure having set all you need handy when you&#8217;re frying</li>
<li><span id="result_box" class=""><span class="">Use the</span> <span class="">handle of a</span> <span class="">wooden spoon</span> <span class="">to thread it</span> <span class="">into the hole</span> of the doughnut and get it <span class="">spinning</span> <span class="">while</span> <span class="">frying</span></span></li>
<li>Put in the caster sugar <strong>immediately after</strong> drained in oil absorbing cooking paper; they&#8217;ll be very hot, but it&#8217;s important that they&#8217;re in contact with the sugar just when they&#8217;re still hot</li>

<div>Recipe by <b>Erika Elia (CuocheinVacanza.com)</b></div>
<p>Prep time: 1 h 30 minutes<br />
Cook time: 15 minutes<br />
Total time: 1 h 45 minutes<br />
Serves:</p>
<p><b>Ingredients</b></p>
<p>2 cups flour (300gr)<br />
1 whole egg<br />
1/2 oz fresh yeast (or 1 packet dried yeast)<br />
1 tbsp caster sugar for the dough<br />
3 1/2 Fl oz (100 ml) fresh heavy cream<br />
1 grated lemon zest (organic)<br />
1 cup (200gr) caster sugar for coating<br />
1/2 bottle of peanuts oil (or corn oil)</p>
<ul></ul>
<p><b>Instructions</b></p>
<p>pour the fresh heavy cream (better if at room temperature or warm) in a cup and mix it well with the yeast<br />
put the flour in a bowl and make a hole in the center (as for making fresh pasta)<br />
pour in the heavy cream<br />
pour in the egg and beat it with a fork<br />
combine these ingredients by the help of the fork<br />
add the tbsp of sugar<br />
add the lemon zest<br />
start kneading to create a ball of dough, smooth and elastic texture, similar to that one for pizza (if too wet you&#8217;ll add more flour if too dry more fresh heavy cream)<br />
cover the bowl with a film and let it rest around 1 h; possibly in a place without air (I put it inside the oven, off and with the door closed)<br />
once doubled the volume of the dough, it&#8217;s ready to be rolled on a work surface sprinkled with flour<br />
roll out the dough to a 1/2 inch thickness<br />
cut the dough with a cookie or a doughnut cutter 3-inch diameter rounds (my granny used the rim of a glass)<br />
cover with a plastic wrap<br />
pour the oil in a large pan and let it well heat (if you put in a crumble of bread you&#8217;ll see small bubbles all around)<br />
when oil is hot, make a hole in the center of the rounds with your thumb and place them slowly in the pan (you can use a slotted metal spoon)<br />
fry just 1 or minute per side, using the handle of a wooden spoon inside the hole and get it spinning Flip them when they&#8217;re light golden brown<br />
transfer on a tray covered with oil-absorbing cooking paper<br />
immediately put in the sugar on both sides and coat well<br />
Your Tuscan doughnuts, Frati Toscani is ready!</p>

<p><span style="font-family: Georgia, 'Times New Roman', serif;">Organization is a must, but first of all: it needs to prepare quick and easy dishes for the days coming after the big (in Italy for sure) Christmas lunch.</span></p>

<div>
<p><span style="font-family: Georgia, 'Times New Roman', serif;">Since I can&#8217;t go far from the genuinity, something homemade and local ingredients&#8230;I think that I&#8217;ll prepare some Ricotta Cheese Gnocchi: they&#8217;re very fast, light (did you know this?) and a traditional Tuscan favorite! </span></p>

You&#8217;ve to obtain a dough that doesn&#8217;t stick at your fingers. If you see it&#8217;s still very moist, add another spoon of flour or more, until it&#8217;s not.</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Put the dough over a floured surface and shape an oval</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Cut this dough in 4 or 5 pieces</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Take each piece and start to roll it over the floured surface to form a long sausage, about 2 cm thick and long more than you can</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Cut with a knife or a &#8220;Gnocchi cutter&#8221; this sausage in pieces long about 2 cm and place them over a floured sheet tray. </span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Put the butter in a pan and, when it&#8217;s fully melted, add the sage leaves (clean but dry)</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">When the leaves change color (a sort of dark grey), it means they&#8217;re crispy. Switch off the heat. Take off the leaves from the pan and put them in a cup</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Put a pot of water (about 3 liters), on the stove and bring to boil</span><span style="font-family: Georgia, 'Times New Roman', serif;">, add 1/2 oz of salt</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;"> Take a slotted spoon (in Italy we call it &#8220;schiumarola&#8221;)</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">When the water is boiling add the Gnocchi </span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Wait about 2 or 3 minutes. When the Gnocchi float, they&#8217;re ready;  </span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Remove them from pot with your slotted spoon, put over a tray and season with the butter</span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Top with the crispy leaves and some grated parmesan as well</span></li>
