Introduction

Spring in Tuscany always arrives with my homemade violet vinegar. Quietly but unmistakably. The air becomes softer, the light warmer, and the garden begins to wake up with small, vibrant details that often go unnoticed unless you take the time to look closely.

Among the first signs of the season are wild violets, delicate and fragrant, scattered naturally across the grass. During this time, foraging becomes part of the rhythm of daily life—something I often share with guests during my cooking classes and private chef experiences here in Tuscany.

In addition to my private dinners and in-villa cooking sessions, I also organize edible herb workshops. These experiences begin with a guided walk through the countryside, where we identify and responsibly gather wild edible herbs together. We then return to the kitchen, where these freshly foraged ingredients are transformed into traditional and creative Tuscan dishes. It is a hands-on, immersive way to reconnect with nature, understand seasonal ingredients, and bring authentic flavors to the table.

Making violet vinegar is one of those simple, almost magical preparations that captures the essence of the season. It’s a small ritual that transforms freshly picked flowers into a beautifully aromatic ingredient, perfect for adding a subtle floral note to dishes.

My Cooking Experiences in Tuscany

As a private chef, I offer tailored culinary experiences across Tuscany, working directly in villas, private homes, and holiday accommodations. These private chef services are designed to bring authentic Tuscan cuisine to your table, using seasonal ingredients and traditional techniques.

In addition to private dinners, I also host cooking classes at my own location, a welcoming B&B that features a dedicated private cooking school. Here, guests can join full immersion culinary experiences lasting three days, where we cook together from morning to evening, exploring regional recipes, fresh pasta making, sauces, desserts, and more. These multi-day experiences are designed not only to teach recipes but to fully immerse participants in the Italian way of cooking and living.

Ingredients / What You Need

Freshly picked violets (ensure they are untreated and edible)
High-quality white vinegar
A clean glass jar with a lid
A fine strainer or cheesecloth
A funnel and glass bottle for storage

Step-by-Step Instructions

1. Gather Fresh Violets

Pick violets early in the morning when they are most fragrant. Choose flowers from a clean area, ideally your own garden, where no pesticides or chemicals have been used. Gently inspect and select only healthy blossoms.

2. Clean the Flowers

Do not wash the violets under running water, as this can damage their delicate structure. Instead, gently remove any visible dirt or debris by hand.

3. Fill the Jar

Place the violets into a clean glass jar, lightly packing them without crushing the petals.

4. Add White Vinegar

Pour white vinegar over the violets until they are completely submerged. Make sure all flowers are covered to avoid spoilage.

5. Infuse for One Week

Seal the jar and store it in a cool, dark place for about 5 to 7 days. During this time, the vinegar will slowly take on a soft floral aroma and a delicate color.

6. Strain and Bottle

After one week, strain the liquid through a fine sieve or cheesecloth to remove all solids. Transfer the infused vinegar into a clean glass bottle.

7. Store Properly

Keep the violet vinegar in a sealed bottle away from direct light. It will preserve well and can be used over time.

Tips and Best Practices

Always use edible flowers that you are certain are safe and free from chemicals.
Work with clean tools and sterilized containers to ensure proper preservation.
Avoid overpacking the jar; allowing space helps the infusion process.
Use a neutral white vinegar to let the floral notes come through clearly.
If the color changes slightly over time, this is natural and part of the infusion process.

Uses for Violet Vinegar

Violet vinegar is both visually appealing and versatile in the kitchen. It can be used to add a subtle aromatic touch to:

Light spring salads with fresh greens
Marinades for vegetables or poultry
Drizzling over roasted vegetables for a delicate acidity
Homemade vinaigrettes combined with olive oil and a pinch of salt
Creative plating elements in fine dining presentations
Flavoring sauces that benefit from a gentle floral acidity

It also brings a seasonal and personal touch to dishes served during private dinners or culinary experiences, where small details make the difference.

Conclusion

Creating violet vinegar is a simple yet meaningful way to connect with the season and the landscape of Tuscany. It reflects a slower, more mindful approach to cooking—one that values fresh ingredients, natural rhythms, and hands-on preparation.

Whether you’re experimenting at home, joining an edible herb workshop, or participating in a Tuscan cooking class or private chef experience, this preparation is a beautiful example of how something as modest as a handful of flowers can become a refined culinary ingredient.

Spring offers these moments briefly. Capturing them in a bottle allows you to enjoy their essence long after the violets have faded from the garden.

If you’ve ever dreamed of learning how to make Italy’s most iconic slow-cooked sauce, our Authentic Neapolitan Ragù Cooking Class in Tuscany is the perfect culinary experience. During this hands-on class, you’ll discover the secrets of preparing ragù with meat rolls (braciole), simmered for hours until rich and flavorful. This traditional recipe, passed down through generations, is the centerpiece of Italian Sunday family meals—and it was personally taught to me by my dear friend Angela, who is of Neapolitan origins. Angela and I often exchange recipes and cooking tips, and this ragù has become one of my most treasured dishes to share.

Unlike a quick tomato sauce, Neapolitan ragù is all about time and patience. The meats—beef rolls, pork ribs, Tuscan sausages, and pork neck—slowly release their flavors into the sauce, creating layers of depth. The braciole, stuffed with cheese, garlic, and parsley, are the soul of the dish.

Pour in the red wine and let it simmer for a few minutes to evaporate the alcohol, stirring occasionally.

Add the prepared beef rolls (braciole) to the sauce and continue cooking gently for another couple of hours, until the sauce is thick and flavorful and the meats are tender.

Instead of traveling

to a villa like we often do with our roaming culinary workshops, this time the celebrants came directly to my cooking school near Lucca, and what a delight it was! We spent the day together making a gorgeous Black Forest cake, Foresta Nera, and other traditional Italian treats. The warmth of the kitchen, the laughter, and the joy of sharing delicious food truly made this birthday unforgettable.

The guest of honor

was someone who loves good food and enjoys creating memories that last a lifetime. We chatted, laughed, and learned together as we explored the art of Italian pastry, and it was clear that for this birthday, nothing was more special than a hands-on cooking experience in the heart of Tuscany.

Important Tips and Preparation Before Starting the Recipe:

Buy or get a Pandoro mold

I usually start around 4,00pm to ensure the final proofing (12 or more hours) takes place overnight, you can bake the pandoro the following morning

While waiting during the various proofing stages, remember not to treat the timing as strict rules because observation truly matters. Each time, you must ensure that the dough has risen sufficiently in volume, and the case of the final proofing, it should have more than doubled.

Homemade Pandoro (2.2 lbs)

Ingredients for the Starter Dough (Lievin):

0.35 oz fresh yeast (about 1/3 of a standard cube)

1/4 cup (2 oz) warm water

2 tsp sugar

1 egg yolk

1/3 cup (2 oz) bread flour

Ingr. for the First Dough:

0.2 oz fresh yeast (about 1/6 of a standard cube)

1 tbsp warm water

1 large egg

1 egg yolk

2 tbsp (1 oz) unsalted butter, softened

1/4 cup (2 oz) granulated sugar

1 2/3 cups (8 oz) all-purpose flour

Ingredients for the Second Dough:

1 large egg

1 egg yolk

1/2 cup (3.9 oz) granulated sugar

1 tsp vanilla extract

1 2/3 cups (8 oz) bread flour

1/4 tsp salt

3/4 cup (6 oz) unsalted butter, softened

For Decoration:

Powdered sugar, as needed

Instructions

1. Prepare the Starter Dough

In a bowl, dissolve the fresh yeast in warm water.

Add sugar, the egg yolk, and bread flour. Mix very well

Cover the bowl with plastic wrap and let it rise for about 1/2 hour.

2. Make the First Dough

Dissolve the fresh yeast in 1 tablespoon of warm water.

In a stand mixer with a dough hook (or a large mixing bowl), combine the starter dough with the dissolved yeast, the egg, the yolk, sugar, and all-purpose flour. Mix until the dough starts to come together.

Gradually add softened butter, a little at a time, and knead until the dough becomes smooth and elastic.

Cover the dough and let it rise for at least 1 hour, or until doubled in size.

3. Make the Second Dough

Give the dough a quick pulse with the mixer to deflate it.

Add the egg, yolk, sugar, vanilla extract, and bread flour to the risen dough. Mix well.

Add the salt and then gradually incorporate the softened butter, kneading until the dough is smooth and stretchy. This step may take 10 minutes in a mixer.

Pour the dough onto a work surface lined with parchment paper and cover it with a dome (I use an upside-down salad bowl).

Let the dough rise again for 1 hour

4. Shaping and Final Rise

Grease and flour a 2.2 lb (1 kg) Pandoro mold.

Roll gently the dough with a rolling pin or by hand (depending on how sticky it is) giving the rolled dough the shape of a rectangle. I often use a dough scraper and work with my hands.

Fold the long sides of the rectangle inward, like a wallet, as you would for puff pastry. Then, fold the dough inward again. What you end up with is a relatively tall rectangle, made up of multiple layers.

place it in the Pandoro mold

Cover with plastic wrap and let the dough rise in a warm place for 12 hours, or until it reaches the rim of the mold. I put it in a turned-off oven

5. Baking

Preheat your oven to 340°F (170°C).

Cover the top of the dough with baking paper (it browns quickly)

Bake the Pandoro on the lowest rack of the oven for 10 mins at 340°F (170°C), then 40 minutes at 320°F (160°C).

Check doneness with a skewer: if it comes out clean, the Pandoro is ready.

6. Cooling and Decorating

Let the Pandoro cool in the mold for 10-15 minutes, then gently remove it and place it on a wire rack to cool completely.

Cut gently the base with a long bread knife

Dust generously with powdered sugar before serving.

In Italy, we put the Pandoro inside a plastic bag, poured in the powdered sugar, closed the bag, and shook it many times.

Tips

For extra flavor, add 1 tablespoon of orange liqueur or rum to the second dough.

Store the Pandoro in an airtight bag to keep it fresh and soft for several days.

Enjoy your homemade Pandoro and have a wonderful holiday season!

One standout is Pasta alla Chiantigiana—a savory pasta that brings the essence of the Tuscan countryside straight to your plate. Today, I’ll be sharing a private chef’s secret on how to make this dish at home, allowing you to recreate the flavors of Chianti no matter where you are.

I often prepare this magnificent dish in Autumn, during my cooking classes and private dinners throughout Tuscany. It is now highly sought after, even at my cooking school near Lucca, where, with some couples of students, we picked grape clusters directly from the vines

What is Pasta alla Chiantigiana?

Pasta alla Chiantigiana is a traditional Tuscan pasta, infused with the region’s renowned Chianti wine and rich, earthy flavors. Made with a base of tender meat (Tuscan Sausages), onions, carrots, celery, garlic, rosemary, and a red wine reduction, it’s the ultimate comfort food for pasta lovers. With a few tweaks from a private chef’s secret recipe, this dish transforms into an unforgettable meal!

Ingredients

To make Pasta alla Chiantigiana, you’ll need the following:

1 pound, 400g of your favorite pasta

200g Tuscan sausage

1 medium onion, finely chopped

1 carrot, diced

1 celery stalk, diced

2 cloves of garlic, minced

A sprig of fresh rosemary

1 cup and half, 300ml of Chianti wine

a bunch of seedless grapes (white or red)

Salt and pepper to taste

Extra virgin olive oil

Grated Pecorino cheese for garnish

How to Prepare It

Sauté the Vegetables
Begin by heating a generous splash of extra virgin olive oil in a large pan. Add the onions, garlic, carrot, and celery, and cook over medium heat until softened.

Add the Saudage and Rosemary
Add the Sausages to the pan, breaking it up as it cooks. Add a sprig of rosemary and let it infuse the mixture. This is a private chef’s secret for enhancing the flavor while keeping the dish authentically Tuscan.

Add the grapes, after cutting each one in half, and let it cook for about 5 minutes

Deglaze with Chianti
Pour the Chianti wine into the pan, allowing it to deglaze and bring out the deep flavors of the meat and vegetables. Let it simmer until the wine reduces, creating a rich, velvety sauce.

In a saucepan prepare a Chianti reduction, adding 3 tbs of sugar to the remaining wine and waiting for it to reduce in a few minutes. When it’s like a kind of syrup, the reduction is ready.

Cook the Pasta
While the sauce simmers, cook your pasta according to the package instructions. Drain and add it directly to the sauce, tossing everything together to coat each strand with flavor.

Serve and Garnish
Serve hot, garnished with freshly grated Pecorino cheese and a drizzle of Chianti wine reduction

1. Fig and Walnut Panforte from Tuscany

Well, I discovered this cake from my daughter Virginia, when she was in kindergarten. Originated from my beloved and charming region of Tuscany. The Fig and Walnut Panforte stands as a testament to rich, centuries-old flavors. Combining dried figs, nuts, honey, and a blend of spices, this dense, chewy cake is a divine indulgence that brings forth the essence of the season.

2. Panettone Sweet Bread

No Italian Christmas is complete without the beloved Panettone. Its light, airy texture combined with chocolate drops (or candied fruits and raisins) exudes the essence of holiday cheer. Our recipe ensures a soft, buttery loaf that will become the centerpiece of your festive table.

3. Mascarpone Cream and Amaretti Crumbles in a Glass

For those seeking elegance without the fuss, the Mascarpone Cream and Amaretti Crumbles dessert in a glass is a quick, easy, and chic option. Layered with velvety mascarpone cream and crumbled amaretti cookies, it’s a symphony of textures and flavors that captures the essence of Italian simplicity and sophistication. This sweet treat is very appreciated during our private chef services, so in Summer as well.

4. Befanini Tuscan Cookies

Here is a traditional Christmas treat, my favorite cookies, the delightful Befanini. These intricately shaped cookies, flavored with citrus zest and spices, embody the festive cheer of the season and are perfect for gifting or indulging in with loved ones.

At that time, a group of enthusiastic individuals from around the world gathered in my Tuscan kitchen.

Working together

As we delved into the art of Tuscan cooking, the star of the day was a humble yet enchanting clementine cake. I shared the secrets of selecting the juiciest clementines and, together, we transformed them into a fragrant citrus puree. The room filled with a zesty aroma, a promise of the delectable creation to come. Then we added almond and hazelnut (from my tree) flour.

Amidst laughter and camaraderie, we crafted the cake batter, savoring the pleasure of sharing our culinary discoveries. The cake came golden and inviting.

As we gathered around the table, the first bite of clementine cake brought a collective sigh of appreciation. It was more than just a cake; it was a souvenir from Tuscany, a memory to cherish forever. That’s why Clementine Cake my cooking class students absolutely adore is going around the world.

The true meaning of Cooking classes in Tuscany

My cooking classes in Tuscany are not merely about recipes and techniques; they are about forging connections, creating memories, and experiencing the magic of this extraordinary region. The clementine cake was the embodiment of these experiences, a sweet reminder of the joy we shared and the indelible mark left by our time together in this culinary haven.

With fresh and seasonal ingredients…always!

Ingredients for a 9-10 inch baking pan:

14 0z (400 gr) of untreated clementines (including the peel)

6 whole medium eggs at room temperature

2 cups + 1 tbsp (250gr) almonds and hazelnut flour (ground with a mixer)

8 ounces (200 gr) of whole cane sugar (or white sugar)

1 teaspoon of baking powder

Instructions:

Wash the clementines and place them in a saucepan, covering them with cold water. Bring to a boil and let them cook for about 30 minutes.

Once cooked, remove the clementines from the water, dry them in a colander, then cut them in half, removing any seeds, if necessary. Place them in a blender and blend them into a cream. Let the clementine cream cool.

In a separate bowl, beat the eggs and sugar together using a hand whisk or a mixer for a few minutes until you have a light and fluffy mixture, pale yellow. Then add the almond and hazelnut flour and the baking powder.

Finally, gently fold in the clementine cream.

Preheat the oven to 350°F (180°C) in a static (conventional) oven.

Line the cake pan with parchment paper or grease it. It’s recommended to use a springform pan, as the cake is soft and it will be easier to shape. Pour in the mixture and bake for about 50 minutes.

To check if it’s done, insert a toothpick into the center; it should come out dry and clean. Check halfway through the baking time to ensure the cake doesn’t brown too much. If necessary, cover it with aluminum foil and continue baking.

Allow the cake to cool completely before removing it from the pan. Serve it plain or with a dusting of powdered sugar.
