Mandarin Jelly (Gelo di Mandarino)
Ingredients (6 servings):

About 2 cups of fresh mandarin juice (from ~8–10 mandarins, 1 kg)

½ cup, 3,5 oz granulated sugar (100 g)

5 tablespoons cornstarch (40 g)

Optional: chopped pistachios + fresh mint for garnish
Instructions:

Squeeze the mandarins and strain the juice to obtain 2 cups (500 ml).

In a saucepan, mix sugar and cornstarch.

Slowly pour in the mandarin juice while whisking to avoid lumps.

Cook over medium heat, whisking constantly, until the mixture thickens.

Remove from heat, let it cool slightly, then pour into molds or glasses. Grease the mold if necessary.

Refrigerate for at least 6 hours until completely set.

Serve plain or topped with pistachios and mint.

Ingredients:

1½ cups raspberries (200 g, fresh or frozen)

2–3 tablespoons sugar (30–40 g)

1 tablespoon grated lemon zest (optional)
Instructions:

Place raspberries and sugar in a small saucepan.

Cook over medium-low heat until the berries break down.

Mash lightly with a spoon and simmer 1–2 minutes until slightly thickened.

(Optional) Strain through a fine sieve for a smooth sauce.

Let cool, sprinkle with lemon zest (optional), then pour over the mandarin jelly before serving.
