
Chicken is one of my fav main courses, you can find it everywhere and its taste is always unespected, because of the many sauces and ingredients that you can add to it.
I can’t forget my granny, when preparing it in late Summer, after piking up some peppers from her garden. She brought home a basket full of colors: green, yellow, red…yes, because the first trick she taught me was: “use all the different colors of peppers that you can find; sweet peppers defintely”.
Over a big table she started to wash, clean and cut peppers and one onion. Than she took a big chicken and cut it in parts.
Tell you the truth, I use only the chicken thighs, they’re pulpy, tender and juicy…and less expensive too. In fact my granny had chicken in a hen-house, that’why she had to use the whole chicken.
The smell of “Pollo ai Peperoni” always remind me my childood and our outdoor games. We played in the backyard and we knew when to come back home just by the “smell”!
Following the seasons is like to rebirth each time, there’s something extremely calming in that circle of Nature that you always see pass and come back again.
What really makes me feel better is that “cooking” involves every sense and every sense lives different experiences in each season.
The touch, the smell, the taste…the home is the same, but you cook different ingredients; it’s just like the life!
